Extreme liquid absorption: why small measurement errors matter more here
Coconut flour is made from dried, defatted coconut meat that is then finely ground. The resulting powder is extremely high in fiber and almost entirely devoid of the fat that whole coconut contains. That fiber acts like a sponge — coconut flour can absorb up to 60–70% of its own weight in liquid, compared to around 55–65% for wheat flour. This means that if you accidentally pack a cup of coconut flour and use 130 g instead of 112 g, you're adding 18 extra grams of flour that will then try to absorb about 11–12 extra grams of liquid from your batter. The result: a thick, dry, crumbly baked good. Recipes developed specifically for coconut flour typically use very small amounts (¼–½ cup) and compensate with extra eggs and liquid.
Why coconut flour is not a 1-to-1 substitute for any other flour
No other flour behaves like coconut flour. Its combination of high fiber, no gluten, and extreme absorbency means that substituting it into recipes designed for wheat or almond flour requires reformulating the entire liquid-to-flour ratio. As a rule of thumb, you can replace about ¼ to ⅓ cup of coconut flour for every 1 cup of all-purpose flour — and then add additional eggs and liquid to compensate.
