Cacao powder:
grams to cups.
Raw cacao powder weighs 100 g per cup — the same as conventional cocoa powder — because both are finely ground from cacao beans with the fat (cocoa butter) removed. The difference between them is in processing temperature, not density.

Raw processing: what "raw" means for density and acidity
Cacao powder is made from cacao beans processed at lower temperatures (below 40–45°C) to preserve enzymes and antioxidants that are destroyed by conventional high-heat roasting. The resulting powder has the same particle size and density as roasted cocoa powder — both weigh approximately 100 g per cup. Where they differ is in acidity and flavor: raw cacao powder is typically more acidic (similar to natural cocoa) and more bitter, with a sharper, more complex flavor profile. In terms of baking chemistry, treat raw cacao as equivalent to natural (non-alkalized) cocoa powder: it will react with baking soda and should not be swapped for Dutch-process cocoa without recipe adjustment.
Nutritional differences and why they don't affect gram conversion
Proponents of raw cacao powder cite higher levels of flavanols and enzymes compared to roasted cocoa. Whether this translates to meaningful health differences is debated, but none of these compositional differences affect density. Both raw cacao and roasted cocoa powder are approximately 10–12% fat (residual cocoa butter after pressing), 50–55% carbohydrates, and 15–20% protein. The particle size and fat content are similar enough that for any recipe that calls for cocoa powder, you can substitute raw cacao at the same gram weight and expect the same textural result, with a slightly more intense, bitter flavor.
Frequently asked questions
- Is cacao powder the same as cocoa powder by weight?
- Yes — both weigh approximately 100 g per cup. They are produced differently but have nearly identical density.
- How many grams is ½ cup of cacao powder?
- ½ cup of cacao powder weighs 50 g (100 g ÷ 2).
- How many cups is 75 g of cacao powder?
- 75 g ÷ 100 g/cup = 0.75 cups — exactly ¾ cup.
