Natural vs Dutch-process: same weight, very different chemistry

Natural (non-alkalized) cocoa powder is acidic (pH around 5), with a sharp, fruity chocolate flavor. Dutch-process cocoa is treated with an alkalizing agent to raise its pH to around 7–8, giving it a milder, deeper chocolate flavor and darker color. Both types weigh approximately 100 g per cup. However, they are not interchangeable in recipes without adjusting the leavening: natural cocoa reacts with baking soda (which requires acid), while Dutch-process cocoa does not provide enough acidity and works better with baking powder. Using Dutch-process in a recipe that relies on natural cocoa's acidity to activate baking soda may leave you with a flat, dense result — and the cause won't be the measurement.

Clumping, sifting, and why cup measures vary so much for cocoa

Cocoa powder absorbs moisture from the air and forms hard clumps readily, especially in humid environments. A cup measured from clumped cocoa can weigh 120–130 g once the clumps are pressed down, while a cup of freshly sifted cocoa powder may weigh as little as 85 g. The 100 g/cup convention assumes cocoa that has been loosened but not sifted. For recipes like molten lava cake or chocolate soufflé where exact cocoa quantity affects set time and texture, weighing 100 g eliminates the clumping variable entirely. Store cocoa in an airtight container to minimize clumping between uses.
