Large-batch cooking is a logistics problem as much as a recipe problem. Here's how to plan it well.

Start with the scale factor

If a recipe serves 6 and you're feeding 48, your scale factor is 48 ÷ 6 = 8×. That's a very large multiple and you'll hit equipment limits fast. The better approach: identify the largest batch your equipment can handle (usually 2–3× for home ovens and stovetops), then bake or cook in that many separate runs. For 8×, that means 3–4 batches of a 2–3× recipe rather than one massive single batch.

Leavening at large scale
