Adjusting recipe

Scale factor = target servings ÷ original servings. Apply it to every ingredient and you're done — except for leavening, which needs a small adjustment at scale.
The formula
Scale factor = desired servings ÷ original servings
Example: a soup recipe serves 4 and you need it for 10. Scale factor = 10 ÷ 4 = 2.5×. Multiply every ingredient by 2.5. Apply the leavening adjustment (use ~2.15× leavening, not 2.5×) if this is a baked item.

Leavening factor only applies to baked goods (cakes, quick breads, muffins). Soups, stews, and savory dishes: scale leavening exactly (or it doesn't apply).
What "serving" means in a recipe
Recipe serving sizes are approximations — a "serves 4" cake might be four generous slices or six modest ones. Before calculating, decide whether the original recipe's serving size matches your intended portion. If you're serving a richer dessert in smaller pieces, the effective serving count changes even if the recipe quantity doesn't. For the calculation to be meaningful, use the same portion size in both the original and target.
Servings mode vs multiplier mode

Multiplier mode lets you enter any custom factor directly — useful when you've computed a pan-area ratio or need a non-round number like 2.5×.
Fractional servings and practical limits
Recipes are designed to produce a certain yield — a cake batter needs enough volume to fill the pan. Scaling down to 1 serving from a 12-serving recipe (0.083×) often produces quantities too small to measure or a batter too thin to bake properly. In practice, 0.25× is the lower useful limit for most baked goods. For cooking (soups, pastas, proteins), scaling to a single portion is more reliable.
Ingredients that don't scale linearly
Most ingredients scale directly: double the servings, double the quantity. A few don't. Leavening agents (baking powder, baking soda, yeast) should be scaled by roughly 75–85% of the calculated amount above 1.5× to avoid over-leavening. Salt is technically linear but should always be tasted and adjusted at scale — palates vary and a small amount of under-salting is easier to correct than over-salting. Spices and flavour-forward ingredients like vanilla, cinnamon, and chili are often best scaled to about 85% of the calculated amount, then adjusted to taste before serving.
Cook time and pan size when scaling servings
Scaling a recipe's ingredient quantities doesn't automatically fix the cook time or pan size. If you double a cake recipe, you need either a larger pan or two pans — the batter won't cook properly if you overfill the original pan. Similarly, a doubled soup doesn't cook in the same time if the pot is now packed to the rim. As a guide: cook time scales with the depth of the item, not its total volume. A double batch of soup in a wider pot cooks in roughly the same time as the original; in the same pot it will take noticeably longer to come to a simmer.
