Solid vs liquid state: the biggest source of coconut oil measurement error
When coconut oil is solid, scooping it into a measuring cup leaves air pockets between the chunks unless you press it firmly. A loosely packed cup of solid coconut oil can weigh as little as 160 g — 27% less than the intended 218 g. Even a firmly packed cup may have small voids. The most accurate way to measure solid coconut oil by volume is to melt it first, let it return to room temperature, then measure. Better still: weigh 218 g directly regardless of state. Saturated fat and high-heat performance
