Vegetable oil:
grams to cups.
Vegetable oil weighs 218 g per cup — nearly identical to other neutral cooking oils. It's one of the easier baking ingredients to measure because it's a liquid and always fills a cup the same way, but grams matter when scaling large batches.

Neutral oils and density: why they're all close to 218 g/cup
Vegetable oil, canola oil, sunflower oil, and similar refined neutral oils all have densities close to 0.91 g/ml, which translates to about 218 g per 240 ml cup. These oils are predominantly long-chain fatty acids (mostly linoleic and oleic acid) with very similar molecular weights, which is why their densities are almost indistinguishable. For recipe purposes, you can treat any neutral refined cooking oil as approximately 218 g/cup without meaningful error. The minor differences between brands and oil types (soybean vs canola vs corn oil) are smaller than the variation from imprecisely filling a measuring cup.
Oil in baking vs butter: what the weight substitution looks like
Many baking recipes can substitute oil for melted butter, but the substitution is not 1:1 by cup or by weight. Butter is about 80% fat and 20% water and milk solids; vegetable oil is 100% fat. When substituting oil for butter by weight, use about 85 g of oil for every 100 g of butter to account for the missing water content. A recipe calling for 1 cup (227 g) of butter needs about 193 g of oil — which is just under 1 cup (218 g). Getting this conversion right requires knowing the gram weight, not just estimating by cup volume.
Frequently asked questions
- How many grams is ½ cup of vegetable oil?
- ½ cup of vegetable oil weighs 109 g (218 g ÷ 2).
- How many grams is 1 tablespoon of vegetable oil?
- 1 tablespoon of vegetable oil weighs about 13.6 g (218 g ÷ 16).
- How many cups is 500 g of vegetable oil?
- 500 g ÷ 218 g/cup ≈ 2.29 cups — about 2 cups and 4.5 tablespoons.
Common substitutions
| Substitute for vegetable oil | Ratio | Notes |
|---|---|---|
| Olive oil | 1:1 by weight | Adds flavour in savoury recipes; neutral grades work in baking. Density is nearly identical (216 g/cup vs 218 g/cup). |
| Melted butter | 118 g butter per 100 g vegetable oil | Butter is ~80% fat. Use 18% more butter by weight to match fat. Adds water and milk solids which slightly affect texture. |
| Coconut oil | 1:1 by weight | Use melted for liquid recipes. May add faint coconut flavour. Identical density when liquid. |
