Olive oil:
grams to cups.
Olive oil weighs 216 g per cup — slightly lighter than water (240 g/cup) because oil is less dense. For drizzling and simple cooking, cup measures work fine; for recipes where oil quantity affects texture and fat content, grams give you more control.

Why oils are lighter than water per cup
All cooking oils are less dense than water — their molecules are long fatty acid chains that pack less tightly than water molecules. Olive oil has a density of about 0.9 g/ml, which is why a cup (240 ml) of olive oil weighs 216 g rather than 240 g. This consistent density makes olive oil one of the more reliable volume measurements — unlike flour or sugar, you can't over-pack or under-aerate a cup of liquid oil. Still, when scaling a recipe for a large batch or making adjustments for nutrition tracking, knowing that 1 tablespoon of olive oil weighs about 13.5 g (not the commonly cited 14 g) adds up over many tablespoons.
Extra-virgin vs light olive oil: negligible density difference
Extra-virgin olive oil (EVOO) and "light" or refined olive oil have slightly different chemical compositions — EVOO retains more polyphenols and minor compounds — but their densities are nearly identical at cooking temperatures. Both measure at approximately 216 g per cup. The flavor and smoke point differ substantially (EVOO has a lower smoke point), but for conversion purposes, treat all grades of olive oil as 216 g/cup. Where the distinction matters is in high-heat cooking: recipes that specify light olive oil for high-heat applications are accounting for smoke point, not density.
Frequently asked questions
- How many grams is ¼ cup of olive oil?
- ¼ cup of olive oil weighs 54 g (216 g ÷ 4).
- How many grams is 1 tablespoon of olive oil?
- 1 tablespoon of olive oil (1/16 cup) weighs about 13.5 g.
- How many cups is 100 g of olive oil?
- 100 g ÷ 216 g/cup ≈ 0.46 cups — just under ½ cup.
Common substitutions
| Substitute for olive oil | Ratio | Notes |
|---|---|---|
| Vegetable oil | 1:1 by weight | Neutral flavour replaces olive oil in baking. In savoury dishes the flavour difference is noticeable. |
| Avocado oil | 1:1 by weight | Nearly identical density (214 g/cup). Mild flavour and high smoke point — good direct substitute. |
| Melted butter | 118 g butter per 100 g olive oil | Butter is ~80% fat; add ~18% extra by weight to match fat content. Adds dairy flavour. |
